Here’s the situation: It’s sunny outside, the family and friends are arriving for a BBQ, but there’s no vegetarian option for those annoying relatives…. two options: let them eat empty burger buns and breadsticks, or serve up this delicious salad!
Makes: a big salad to share with friends and family.
Ingredients
- 1 bag of spinach
- 1 bag of watercress
- 2 oranges, segmented
- 2 handfuls of walnuts (broken walnuts are cheaper to buy – click here for where I buy them!)
- 1 avocado, chopped in to chunks and sprinkled with lemon juice (to stop the avocado from oxidising)
Dressing
Depending upon the amount of people, measure ingredients in these quantities:
- ¾ virgin olive oil
- ¼ white wine vinegar
- pinch of salt
- pinch of black pepper
- 1 tsp wholegrain mustard
- 1 tsp honey
How To:
Throw all salad ingredients together in a large bowl and wait until serving before adding the dressing. Those veggie friends and relatives will thank you!
