Simple Summer Salad

Here’s the situation: It’s sunny outside, the family and friends are arriving for a BBQ, but there’s no vegetarian option for those annoying relatives…. two options: let them eat empty burger buns and breadsticks, or serve up this delicious salad!

Makes: a big salad to share with friends and family.

Ingredients

  • 1 bag of spinach
  • 1 bag of watercress
  • 2 oranges, segmented
  • 2 handfuls of walnuts (broken walnuts are cheaper to buy – click here for where I buy them!)
  • 1 avocado, chopped in to chunks and sprinkled with lemon juice (to stop the avocado from oxidising)

Dressing

Depending upon the amount of people, measure ingredients in these quantities:

  • ¾ virgin olive oil
  • ¼ white wine vinegar
  • pinch of salt
  • pinch of black pepper
  • 1 tsp wholegrain mustard
  • 1 tsp honey

How To:
Throw all salad ingredients together in a large bowl and wait until serving before adding the dressing. Those veggie friends and relatives will thank you!

This is a super-quick recipe you can make in minutes for Summer get-togethers. Alternatively, use smaller quantities to prepare a healthy and delicious lunch or light dinner for yourself.
