Plant Powered Antioxidant Pudding

plantbowl1‘Antioxidant’ it a word that gets thrown around a lot. We’re told antioxidants are good for us, but what do they actually do? To put it simply, antioxidants slow the process of ageing, which means the body and mind stay in good condition for longer, and it’s easier for toxins to be released from the body’s systems. They slow the rate of cell damage, which in turn means cells are more protected from infection and types of cancers. For everyday fitness, consuming antioxidants helps speed recovery times, and can help enhance heart health. You’ve probably heard that antioxidants are found in abundance in red wine, but if you’re looking for something a little more sober, here’s a healthy bowl of plant based pudding high in antioxidants.

INGREDIENTS

Serves 2

  • 1 banana
  • 1 tbsp chia seeds
  • 1 handful frozen blueberries
  • 1 tbsp raw cacao or cocoa powder
  • 2 tsp maca powder
  • cold brew black tea or coffee (high in antioxidants)
  • 1 tsp good quality honey (more if you like a sweeter taste)

METHOD

Add all ingredients to a blender or food processor and fill half way with the liquid

Blend until a mousse-like consistency is formed

Scoop into a dessert bowl or cup and leave to set in the fridge for a couple of hours

Top with any dark coloured berries, seeds and dark chocolate
