January is usually a time we’re a little more health conscious than usual. The Winter definitely isn’t over yet, but the need to feel refreshed, light and revitalised is very apparent after the festive season.
Although January is often touted as the month to ‘detox’, it’s actually not a great time of year to do anything like this: Cold weather, dry Winter air and the fact that the foods that would naturally be available are still those heavier, more comforting dishes all indicates that this is the time to nourish ourselves to full health, not starve….
This comforting breakfast recipe makes the most of the last Winter or butternut squash of the season, and combines it with healthy fats that actually speed up metabolism so your body can work efficiently to absorb and digest nutrients. Include these ingredients regularly in your meals, and you’ll notice your skin glowing and feeling a lot healthier in no time.
Almonds are one of the nuts highest in protein to keep you full and satisfied for hours, while avocado is well known to help improve the quality of skin and reduce sugar cravings. The optional orange and lemon zest works as a powerful anti-inflammatory and contains lots of immune-enhancing vitamin C, providing a citrussy boost to wake you up in the morning!
Ingredients (Serves 2)
- 1 cup of chopped squash
- 1 banana
- 1 avocado
- 2 tbsp chia seeds
- 1 tbsp ground flax or hemp seed
- 1/4 cup almond or non dairy milkTop with: orange & lemon zest and raw chopped almonds*
How To
- Cook the squash either by steaming for 10-15 minutes or cheat and place in the microwave for 7 minutes
- Once cooked, add all ingredients to a food processor or blender and blend until everything is well combined
- Scoop into two bowls and top with orange and lemon zest and raw chopped almonds.
*(Soaking the almonds – or any nuts you use in future recipes – over night allows them to digest more easily, so if you suffer from digestive issues, this may be a good idea to try out!)
