Spring + Summer Super Greens Salad

Green = good, right? Well you can’t go wrong with this recipe then. High in plant protein thanks to the peas and beans, and tangy and fresh thanks to fresh mint and lime juice. This is a great go-to salad when there are lots of hungry mouths to feed.

 

Ingredients
(Serves 4 as a side dish)
 

  • 2 courgettes, spiralised
  • ½ cucumber, spiralised
  • 1 large handful green beans
  • 1 cup frozen peas
  • 1 handful fresh mint leaves
  • ½ head of romaine lettuce
  • 1 handful pumpkin seeds

Dressing:

  • 1 generous glug of hemp or olive oil
  • juice of ½ lime
  • good quality salt and pepper to taste 

How to:

  • Add the spiralised courgette and cucumber to a large bowl
  • Steam the beans and cook the frozen peas. Once they’re cooked, immediately submerge in cold water to cool them down and then add to the bowl
  • Shred the romaine lettuce by hand and add to the other ingredients
  • Pour on your dressing and mix well
  • Sprinkle on pumpkin seeds to serve
  • Enjoy!
