Oats: Help to boost mood levels and provide sustainable, slow-release energy

Coconut: Provides healthy essential fats which can be used for energy and actually help to increase metabolism
Ingredients:
1 ½ cups oats
12 dates
½ cup fresh grated carrot
½ cup cashews
2 tbsp raw honey
1 tsp cinnamon
½ cup shredded coconut for rolling
How To:
Place all ingredients apart from the coconut in a blender or food processor and pulse until everything is broken up and well combined.
Take small pieces of the mixture and roll them firmly into balls
Roll each ball in shredded coconut
If you have time; once everything is complete, place the balls in the fridge for at least an hour to set and firm-up
