Cauliflower was one of the white foods included on the list of 2017 health and wellness predictions. Apparently we’re all going to be eating it this year, so it’s time to come up with some healthy and tasty ways of consuming the not-so-popular vegetable….
This pudding is full of fibre (helping you feel full and satisfied for longer), antioxidants, vitamin C, vitamin K, magnesium and manganese. It’s also got the optional added benefits of inflammation-reducing, nerve-calming, immune-boosting chaga mushroom extract – another 2017 superfood to look out for. The Himalayan Pink salt is a wonderful thing to have in the kitchen to add to recipes; this salt contains all 83 trace minerals the body needs, and is a great way to balance electrolytes and promote healthy muscle function.
The recipe is simple and is absolutely perfect for when you’re in the mood for something chocolatey, but staying away from processed chocolate and added sugars. Rest in the knowledge that whilst your tastebuds are enjoying thick, silky chocolateyness, your body is enjoying nutrients from raw cacao, cauliflower, and a few other totally healthy ingredients, including help oil, which is so nourishing for the digestive tract, and is great for calming inflammation.
Perfect as a quick breakfast, satisfying dessert or afternoon snack!
Following a particular labelled diet? No worries, this is paleo, vegan, vegetarian, and IQS safe if you leave out the dates or honey.
Ingredients
- 1/2 cup cauliflower, steamed
- 2 tbsp raw cacao powder
- 3 dates, stones removed or 2 tsp raw honey
- 1 tbsp ground flax
- 1 tbsp hemp oil
- almond milk to cover
- pinch of Himalayan Pink Salt
- optional: 1 tbsp maca
- optional: 1 tsp chaga mushroom extract
How To
Steam the cauliflower until tender
Add all ingredients to a blender, and blend until it reaches a thick and smooth consistency
Top with dark coloured berries like blueberries or blackberries for an extra dose of antioxidants, or cashews and rose petals for powerful mood-boosting properties.
Either eat right away, or leave to set in the fridge for an hour
