So, Spring is finally officially here, which often brings with it the motivation to get moving and spend some more time outside in the fresh air. If you’re planning some outdoor adventures, you’ve finally fixed your bike, you’ve unearthed those old running shoes, or you’re currently training for the London Marathon, it’s important to fuel your body properly.
These little bites are full of ingredients that will help to keep you satisfied, full or energy, and they even provide a little mood boost too! Healthy carbohydrates contribute to the energy needed to get going, whilst fats like coconut give more sustained, long-lasting energy, allowing you to spend more time doing what you love with the people you love. Cashews are a proven mood-booster, and vanilla can help to relive anxiety. Make a batch of these and take a few with you when you know you’ve got a busy day ahead!
Ingredients (makes 20-25 balls)
- 2 cups oats
- 2 handfuls pitted dates
- 3 tbsp agave, honey, maple syrup or brown rice sugar
- 1 tbsp coconut oil
- 1/2 cup shredded coconut
- 1 tbsp cashew butter
- 1 tsp vanilla extract
How To
Add to oats to a food processor or blender and pulse until they become fine
Add the dates and blend until they’re well combined
Add all other ingredients, and blend intermittently until everything comes together to form am almost dough-like texture – if it doesn’t seem to be coming together, add another tbsp each of agave / honey etc. and cashew butter (if you’re storing these in the fridge you could also add coconut oil, although they’re more likely to ‘melt’ if you take them out with you for the day….)
Use your hands to form the mixture into balls
Place in the fridge for a few hours to set
Grab a few on your way out to provide you with a 100% healthy energy boost!
