Warm Spring evenings are complemented by lighter foods and cooling desserts, and this one is perfect for serving at a gathering or dinner with friends.
Blueberries are high in antioxidants, fiber, potassium, phytonutrients, and vitamins C and B6. They’re a well known superfood, and are one of the best foods to consume in order to help maintain optimum brain function throughout life. Lavender is calming, cooling, and stress relieving, which can also help to boost brain function, as stress and anxiety are major causes of ‘brain fog’ and cognitive issues. One more brain-power bonus? The brain is made from 70% fat, and coconut oil has been well documented as a potent fuel for focussed brain power.
Containing 100% healthy, natural ingredients, this dessert provides something a little different, with a flowery finish and plenty of plant based protein and healthy fats. Suitable for vegans, vegetarians, paleo, gluten free and lactose intolerant too. This is also pretty much a raw dessert and would easily pass as a healthy breakfast!
Ingredients
(serves 2-4 depending upon size of serving cups)
- 2 handfuls blueberries or mixed berries (frozen or fresh)
- 1/2 cup almond milk
- 2 tbsp chia seeds
- 3 tbsp maple syrup
- 1 tbsp coconut oil
- 2 tbsp cacao powder
- 1 tsp fresh lavender
- 1/2 tsp vanilla extract
How To
Melt the coconut oil in a pan or in a mug in the microwave for a minute or so
Stir in the cacao powder and 1 tbsp maple syrup to form a raw chocolate paste
Pour the paste into your pots / glasses / cups and place in the fridge, leaving for roughly 30 minutes to set
Meanwhile, add the rest of the ingredients to a blender and blend well
Place in the fridge for about 30 minutes, stirring a couple of times to help the chia seeds absorb all the liquid, creating a thicker consistency
After 30 minutes, pour the mixture into the cups and leave to set in the fridge for an hour or so
When you’re ready to serve, decorate with a little lavender and coconut and enjoy!
Tip: Eat this slowly to encourage the raw chocolate base to melt by the time you dig into it….
