Vanilla & Cardamom Quinoa Pudding

quinoaricepuddingIf the snow and freezing temperatures has you craving warm and sweet comfort foods, rice pudding may be one of the nostalgic things on your mind. If however, the thought of a big bowl of white rice is enough to give you symptoms of bloating and heaviness, this quinoa alternative packs a punch of plant based protein and minerals, but skips the heaviness of rice.

INGREDIENTS

  • 1 cup quinoa
  • 2 cups milk (use whatever milk you prefer, and for a thicker, creamier texture, use canned coconut milk)
  • 1 tsp ground cinnamon
  • pinch of good quality salt
  • 5 cardamom pods, opened and ground
  • 1 vanilla pod, opened with the insides scraped out, or ½ tsp vanilla extract
  • Once cooked, add honey to sweeten

 

METHOD

Rinse the quinoa in cold water

Add all ingredients to a pan and bring to the boil

Once at a rolling boil, lower the temperature and simmer until the quinoa has soaked up all the milk

Once cooked, stir through honey or any other sweeteners you might want to use

Serve on a cold evening for a comforting dessert, or as a warming breakfast
