Luxury Cocoa + Coffee Bliss Balls

coffee&cocoaballsIf you’re a fan of coffee and dark chocolate, these are a dream combination, providing one of the most delicious snacks I’ve made – according to those who’ve tried them! Providing a powerful energy boost, plenty of antioxidants and healthy fats, these little balls of beautiful healthy indulgence are the perfect thing to have on hand throughout the week as a great alternative to chocolate or sugary snacks. This recipe makes roughly 20-25, so adjust according to the amount you fancy – store in the fridge for best quality.

 

INGREDIENTS

  • 2 cups oats / gluten free oats
  • ½ cup cocoa powder (I use organic Green & Blacks cocoa)
  • ¼ cup dates, softened in hot water beforehand
  • 2-3 tbsp good quality instant coffee
  • 3 tbsp coconut oil, softened
  • 3 tbsp honey
  • pinch of good quality salt
  • 1 large bar of dark chocolate

METHOD

Add the oats, cocoa, coffee and salt to a food processor and pulse until everything is combined and the oats are finer in texture

Add the dates a few at a time and pulse in between each lot of dates

Add the coconut oil and honey and process / pulse again

(If you need to make the mixture hold together more, add more honey)

Roll the mixture into bite size balls and place in the fridge for about 30 minutes

After 30 minutes, melt the dark chocolate in a large bowl, and roll each ball until coated in the melted chocolate

Place back in the fridge and leave for about an hour or overnight (for faster results, place in the freezer for about 30 minutes)
