A naturally sweet, healthy and refreshing dessert (or breakfast, or snack), this little ice-cream-like recipe is incredibly easy, and can be made right before serving. With no refined sugar and healthy ingredients, it’s a dessert that won’t spike your blood sugar, but will satisfy post-dinner cravings. Experiment with different toppings like shaved chocolate, nuts, or a flake!
INGREDIENTS
(serves 8-10 as a dessert)
- 2 and ½ cups frozen mixed berries
- 1 can coconut milk
- 1 tsp natural vanilla extract (optional)
- 2 tbsp honey, pure maple syrup or agave
METHOD
Add all ingredients to a food processor or blender
Wait a few minutes for the berries to start melting (this makes blending them easier and won’t break your blender!)
Blend until you reach an ice cream-y consistency, adding more sweetener if you need
Spoon into pots or fancy glasses and top with seeds, coconut flakes, or chocolate
