Superfood Chocolate Peanut Butter Cups (VE)

cacaomuffinFor all mood boosting, hormone balancing, crave – curbing, satisfying, brain enhancing needs, this super healthy superfood treat ticks all the boxes. Packed with healthy fats, plant based protein  and tonnes of minerals like magnesium, zinc, and antioxidants, this recipe contains a lot of the nutrients many of us are chronically deficient in.

If you aren’t able to get hold of the superfood ingredients (like raw cacao powder, maca and matcha green tea), it’s easy to replace the cacao with good quality cocoa powder, and leave the others out, however you can now buy maca and cacao powder from places like Aldi, who stock a surprisingly impressive range of superfood powders and organic wines! The addition of healthy fats and plant protein in place of processed foods and sugar in anyone’s life is going to be beneficial, so with or without the extra ingredients, this’ll do you good.

 

INGREDIENTS

(makes 1, could easily be shared between 2)

  • 1 small chunk of cacao butter (roughly the amount that fits easily in the centre of your palm)
  • 1 tsp coconut oil
  • 3 tbsp cacao or cocoa powder
  • 2 tsp maca powder
  • 1 tsp matcha green tea powder
  • ½ tsp vanilla extract
  • 1 tsp peanut butter
  • A sprinkling of seeds
  • Optional sweetener: coconut sugar, stevia, jaggery etc (it’s best to use a solid or granulated form of sweetness to help the chocolate remain solid after it has set)

METHOD

Place a heat-proof glass bowl over a pan of gently simmering water (ensure the water doesn’t touch the bottom of the bowl)

Add the cacao butter and leave until melted, stirring occasionally

Once melted, add the coconut oil and again wait until melted, stirring a couple of times

Once melted, take off the heat and add the cacao or cocoa powder, maca, matcha, sweetener and vanilla, mix well until everything is combined

Pour the mixture into a muffin case

Place the tsp of peanut butter on the top of the mixture in the case, and gently press / poke it until the peanut butter disappears beneath the surface. Once everything cools and sets, this allows the peanut butter to remain in the center of the chocolate

Sprinkle the seeds on the very top

Place in the fridge and leave to set for a few hours or overnight. Of course if you need quick results, place it in the freezer!

Once set, you should be able to remove the case easily, leaving a luxuriously chocolatey peanut butter – filled superfood treat.

Store in the fridge for up to a week for best quality
