Vitamin C Superfood Mufffins

vitamin C muffinsWith a dose of baobab powder, orange zest and lemon juice, these muffins pack a punch of vitamins, preparing you for the cold months ahead. Baobab fruit is one of the highest sources of vitamin C on the planet, and when accompanied by orange and lemon, creates a powerful concoction of immune-enhancing ingredients and vibrant flavours. The spelt flour used is far easier to digest than most other flowers, and the addition of poppy seeds adds extra fibre – essential for a healthy gut and therefore healthy immune system!

Prevention is better than cure, so give this recipe a try and discover one of the most delicious ways to prevent a cold or flu!

 

INGREDIENTS

  • ½ cup baobab powder (available at most health food shops, including Holland and Barrett)
  • 1 ½ cups spelt flour
  • ½ cup non-dairy milk
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • pinch of good quality salt
  • 4-5 tbsp poppy seeds
  • 3 tbsp agave, 1 tbsp stevia, or ¼ cup jaggery
  • ½ orange, zested
  • juice of 1 lemon
  • ½ tsp orange extract
  • 2 tbsp coconut oil
  • 2 eggs

METHOD

Pre-heat the oven to 175 C

Add all dry ingredients to a large mixing bowl and stir to combine

Crack in the eggs, and add the orange extract and zest, lemon juice, your choice of sweetener and milk

Melt the coconut oil and add it to the bowl

Mix well until everything is combined

Scoop the mixture into muffin cases and place in the oven

Bake for roughy 20 minutes, or until slightly brown on top and springy to the touch – a good indication of muffin ready-ness is that you’ll start to smell a sweet, orangey fragrance in the kitchen.

Once baked, leave to cool for a few minutes then transfer to a rack or your kitchen sideboard to cool completely.

Optional: Add a squeeze of honey over the muffins whilst they’re still warm to create a sweet and sticky topping.
