With a base reminiscent of cheesecake and a filling of sweet chia pudding, this healthy cheesecake-ish dessert satisfies any cake cravings whilst providing a generous dose of minerals and nutrients. Full of fibre, healthy carbohydrates, plant protein and good fats, this is ideal as a breakfast, afternoon indulgence or delicious dessert.
This is a great dessert to make in a recycled jar – the sort of one you’d get pasta or curry sauce in. Make a few and store in the fridge to grab throughout the week.
INGREDIENTS
- 2 tbsp chia seeds
- 2 dates
- 1 handful oats (gluten free optional)
- 1 tsp honey
- 1 tsp lemon zest
- ½ lemon juiced
- ¼ cup of nut, oat, soy or dairy milk
- ½ tsp vanilla extract (optional)
- 1 tsp coconut oil
- pinch of cinnamon
METHOD
In a blender or food processor, process the oats, dates, honey, cinnamon, lemon zest, and coconut oil. Try to create the sort of mixture you’d use for energy balls.
Press the mixture into the bottom of a recycled jar or glass cup
In a separate bowl, mix the chia seeds, milk, lemon juice and vanilla extract
Pour the mixture over the top of the base
Place in the fridge and leave to set for at least an hour or over night
Enjoy! Serve with a sprinkling of coconut flakes or chopped almonds for extra plant protein and healthy fats
