A wonderful, seasonal blend of soft and sweet fruit, and salty, tangy feta. This is a lovely light salad for leisurely lunches or warm evening meals.
It takes minutes to make and will work as a main meal or a side at your next get together or BBQ. All of the ingredients are seasonal, so they’re likely to be easily available in the supermarket at the moment, and priced reasonably. Have a go and let me know what you think!
Ingredients (serves 2)
- 1 courgette
- ½ mug frozen peas
- 1 fresh peach
- 2 handfuls of salad leaves
- a few cherry tomatoes
- Roughly 40g feta cheese (2 servings)
- Juice of ½ lemon
- A glug of good quality olive oil
- Salt and pepper to taste
Method
Divide the salad leaves between 2 plates
Use a vegetable peeler to strip the courgette into ribbons and place on top of the leaves
Cook the peas according to the instructions or however you’d usually cook them if you have your own fresh peas
Slice the tomatoes in half and the peach into thinner slices
Once cooked, add the peas and all other ingredients to the plates other than the feta
Glug on your olive oil, squeeze on the lemon juice, sprinkle over salt and crack on with the pepper
Finally, crumble over the feta cheese
