Apple & Fennel Summer Slaw Recipe

A very healthy, fresh alternative to the traditional coleslaw; this salad is brilliant at BBQs and works well as a side with your mid-week meal. Apples and carrots are effective liver-cleansers, and walnuts provide essential omega 3 healthy fats to boost brain power! Make a large batch at the beginning of the week and you can mix any leftovers with brown rice for a super nutritious lunch!

Ingredients

Serves 4 as a generous side salad

  • 2 apples
  • 3 sticks celery
  • 3 medium carrots
    1 small bulb of fennel
  • 1 handful fresh herbs (coriander works particularly well, but use whatever you have at home)
  • 1 handful walnuts
  • 1 tbsp lemon juice (to preserve)

Dressing:

  • 1 big glug hemp or olive oil
  • 2 tbsp fresh lemon juice
  • good quality salt and pepper to taste

How To:

  • Roughly chop all the vegetables other than the carrots into small chunks and add to a large bowl
  • Grate the carrots and add to the vegetables
  • Add the walnuts and fresh herbs and mix well
  • Cover with 1 tbsp lemon juice and keep in the ridge until you’re ready to eat
  • Dress the salad with your oil, lemon juice, salt and pepper when you’re ready to serve and enjoy!
